In New England purveyors of lobster rolls typically cram a full pound of lobster (usually claws and knuckles) on a roll. There is no excuse for chintzy lobster portions.

I’d have to say probably they didn’t expect the demand to your question but also sad to say our experience might have reflected that. I probably had about half as much lobster in my roll as what is shown in your picture. One of the other people in our group got the tacos and was very disappointed at the amount they got in them. It was all very strange. The lobster bisque was the biggest hit at our table of four. Hats off to Brew 101. Some food consumers sat at their tables and didn’t bother to order a beverage. They just let it go. Most of us did. Great hard cider!
